What is Bulgur Wheat?
For those who are not familiar with bulgur wheat, it is a type of wheat that is parboiled, dried, and cracked. It is considered a whole grain. Use less of it in any salad for a lovely nuttiness and to make it hearty. It has all the benefits of our regular whole grains.

bulgur Wheat Chickpeas Hot boiling water Cucumber Cherry tomatoes Peppers Strawberry Onion Mint Cilantro Cranberry Walnut Pumpkin Seeds cheese Cubes(Optional) For Dressing, Olive oil Lime Juice Salt, crushed black pepper, red pepper flakes, honey/maple syrup
Is this salad different from tabbouleh?
Traditional tabbouleh uses lots of these ingredients, but not all of them. This recipe uses lots of other vegetables, fruits, and nuts. This salad is heartier than tabbouleh.
How to make it?
-Cook the bulgur wheat according to the package instructions. Mine said to soak the bulgur in salted hot water for about 30 minutes. After it absorbs all the water, fluff it up with a fork. Sometimes, you feel that bulgur is cooked with a nice bite, but water is still there. Drain all the water by putting bulgur in cheesecloth and squeezing it, or you can strain it using a strainer. Just put a little pressure so that all the water content is gone. Chop all the vegetables and fruits and arrange dry fruits. Whisk the dressing by combining all the ingredients. Pour it over the salad and mix everything. Enjoy.
