These potato pancakes are called Gamja-Jeon. Gamja means potatoes in Korean, and jeon means pancake. There are different ways of cooking them, and this is my way. It’s easy and requires only a handful of ingredients. They are super hearty breakfast meals that can be served as an appetizer for any dinner or get-together. Make them small, and these crispy potato pancakes will wow your guests.
What to add to it?
I prefer to add scallion, but you can also add sliced onion. Leeks, carrots, and bell peppers will also work, depending on your preference.

How do you grate potatoes?
I use a box grater for grating potatoes since I do not use large quantities. However, I use a food processor when I use large amounts. May recipes call for blended potato; however, I wouldn’t say I like that texture. How to make it-?
Wash the potatoes in cold running water. I like how the skin works in the potato to provide texture. So I do not remove them, and after washing I grate them. Wash them a few times after grating in cold running water. Do this till the water comes out clear. Soak the grated potato in cold water for at least 20 minutes. Please do not skip this process; it makes them extra crispy. Add all the spices and scallion. Now add cornstarch and mix them properly. Take a cast iron pan or any heavy non-stick pan. Spread potato mixture on the pan and cook till crispy on both sides. Remove to a plate, and enjoy with sauce and any dip.
