It is easy and needs just a few ingredients. Vegan and gluten-free. Making this in the air fryer is relatively healthy because it’s not using much oil. In less time, you can prepare an excellent-looking, delicious side dish. It tastes delicious as an appetizer or just as a snack. Very fresh and healthy, because a lot of veggies are consumed.

What are Greek tomato fritters?

Greek tomato fritters, or Tomatokeftedes, as they are called in Santorini, are made of fresh, juicy tomatoes, onion, mint, basil, and lots of different seasonings, such as red pepper, oregano, red peppers, feta cheese, salt, and pepper. They are great to serve on any occasion, like Thanksgiving, Christmas, or other get-togethers. Here, I am simplifying the recipe and not using feta cheese and oregano; however, if you like them and are available, use them. They are great for lunch boxes as well. Kids love them because their flavor profile is like pizza.

Which tomato variety should you use to make this Greek tomato fritter?

Using the most flavorful, ripe, and delicious tomatoes is a must for this recipe. I have used farm-fresh vine-ripe tomatoes, but nice and firm Roma tomatoes are good, too. You can also use cherry tomatoes. There is no hard and fast rule, and we should always use what we like and what is locally available.

Tomato- Onion, Mint Parsley- Chili Flakes Salt Crushed Black Pepper All Purpose Flour Oil for frying the fritters.

Can we make these fritters air-fried?

Absolutely. Follow all the steps except frying. Line an air fryer with parchment paper or a liner. Preheat the air fryer. Place cakes with a cookie dough scooper or spoon. Do not overcrowd the air fryer basket; flattening the Pancake will help make it crispier. Brush patties on both sides with avocado oil or olive oil. Air fry them until they look crispy and perfectly cooked. Enjoy with Greek yogurt dip.
