The use of vegetable broth imparts a great flavor profile. Packed with vitamin C this vegan soup is a great immunity booster for winter months or sick days.

What ingredients do we need to make it,

Fresh veggies of your choice- I have used carrots, green bell peppers, green beans, and broccoli. You can opt for your favorite ones. Corns are good to use as well. Aromatics- Onion, ginger, and garlic are the perfect aromatics to use. I have used fresh red Thai chilies as well for flavor. Protein - I have used tofu in the soup for some added protein. You can use Paneer, or chicken for other alternatives. You can skip the protein part to make a light soup as well. Vegetable stock/Chicken Stock.- For an amazing flavorful broth. Herbs- Lots of fresh cilantro(coriander), Use lots of stalks as well. They have the most flavor. Corn Starch for making it a little thick. Seasoning- Just salt and crushed black pepper. Lemon Juice- Fresh lemon juice is best to provide that awesome tangy taste. You can certainly replace lemon juice with lime. Oil/Butter- You can use any type of neutral oil. I prefer olive oil /Avocado oil or butter to cook this soup.

How to cook lemon coriander soup?

Heat oil in the pan over slow /medium heat. Add ginger, garlic, and fresh chilies to the oil. Saute to get the most aromatic flavor. Add chopped onions till they look translucent. Add your chosen chopped vegetables and cook until the veggies are tender and soft. Add vegetable stock or stock of your choice. Now is the time to add salt and crushed pepper for the flavor. Furthermore, mix your protein If it’s tofu or paneer it doesn’t need to cook much. One minute is more than enough. If you are adding chicken cook the chicken first and then add in small pieces. Mix cornstarch with a little cold water and add once the soup starts boiling. Cook it for till it starts thickening. Switch off the gas stove and add the lime. lemon juice to the soup. Taste the seasoning and add if you feel that way. Serve in a bowl or cup to enjoy.
