Makki ki roti is an Indian-style gluten-free flatbread. This is quite famous in north India and is typically served in winter with Sarson ka saag (Mustard Greens). It is delicious and comforting. Made with Indian Sweet Corn Flour, this roti needs only a couple of ingredients. Have you ever tried one of the most popular North Indian combos? If not , you need to make it soon. Growing up we had saron ka saag and makki ki roti at home, though it was a little different from the popular Punjabi version. The maize flour that is used there was white and more sweet. So the texture and taste were a little different. After moving from my home town when I tasted this Punjabi version of Makki ki roti in a restaurant, I loved it . It has a rustic crispy texture, yet it was melt-in-mouth delicious. A little bit of turmeric, salt, and a few aromatic whole spices made this roti truly a masterpiece. I perfected the recipe for making this Makki ki roti and started making it very often. I am surprised that it took me so long to share this on my blog.

What is Makki Ki Roti?

A popular gluten-free North Indian Flat Bead. The perfect combination to serve is with a bowl of sarson ka saag and some jaggery. Sometimes grated radish and fresh cilantro leaves are added to enhance the taste. Traditionally cook on chulha, which are brick stoves found in mostly villages. A little bit of crispy charred makki ki roti with a dollop of fresh homemade white butter is just delicious. In North India home made sweet /Savory lassi is served with Makki Ki roti and Sarson ka saag. This Punjabi vegetarian delicacy is popular everywhere. You can easily get maize flour /Makki ka atta in almost all Indian Stores and throughout the whole of north India.

Ingredients Needed,

Just 4 Ingredients are required to make, Makki ki roti, Maize Flour/Yellow Sweet Corn Flour (from Indian grocery stores) Salt , Turmeric Powder Hot Boiling water

How to make it?

Traditionally, after making the dough makki ki roti was given shape by hands. It is a lovely sight to watch when mothers or grandmothers do this with so much passion and expertise. Later on, it is cooked on a traditional brick chulha (stove) for that rustic effect. Slathered with homemade white butter this dish is such a delectable masterpiece that you would like to taste it again and again.

The Process,

This simplified process gives the perfect Makki ki roti every time. Take some water in a pan /wok. Let it come to a boil. Add flour with some salt and turmeric powder and whisk it to mix everything. Remove from the gas and spread it on the clean counter or a plate and let it cool for 1 minute. Then carefully knead the dough with the help of some ghee or oil in your palm. The dough should be perfectly smooth to get the perfect puffed-up roti. Make round dough balls of equal size and Roll them in the shape of a roti. Sprinkle some dry flour on both sides while doing that .This roti will be a little thicker than wheat roti. Almost like a medium-thick pancake. Cook it on the hot griddle and then char it on the open flames for a few seconds. This process is just to give a lovely taste and look. Rub some butter or ghee and enjoy with sarson ka saag and jaggery.

What to Serve with Makki Ki Roti?

Traditionally this is served with sarson ka saag. however, I don’t see why we cannot serve with any other things. Any type of pickle, curry, or any other green will also go with it but having Makki ki roti with the saron ka saag is the ultimate delicious thing. Have some jaggery, and fresh radish sprinkled with some lime juice. I serve rice pudding /kheer with this combo, which serves as a perfect dessert.
