Pahadi cucumber raita or kheera ka raita is a traditional kumaoni recipe. Grated cucumber is mixed with whisked thick yogurt, fresh herbs, and spices. It’s refreshing, cooling, and very delicious as a side. Quick and straightforward, this recipe comes under twenty minutes.

Why is this called Pahadi Cucumber Raita?

Pahadi is a Hindi word that means it is from mountains since this raita is a staple throughout the hills of northern India. It is called Pahadi raita. Traditionally, this dish is prepared from cucumbers grown in the mountains, but we will use whatever is available.

What is the difference between regular cucumber raita and Pahadi cucumber raita?

Pahadi raita uses yellow mustard paste with all the other herbs and spices. Yellow mustard gives a unique flavor to this raita. Secondly, it’s very uncommon to put turmeric powder in any raita. However, it is used here, giving a perfect yellow color to the Pahadi Cucumber raita.

How can the flavor develop?

Usually, I make this raita one or two days before I am supposed to serve for any occasion. That is how the flavors develop by mixing. This raita is delicious to have in your fridge. I prepare it and store it in the refrigerator, serving it as a good side or dip.

What to serve with this raita?

Traditionally, in Pahadi homes, this raita is served with rice and daal. I love them with any paratha or poori as well. I sometimes serve this and some pita chips as a dip. They are just delicious to have in a wrap as well. The possibilities are endless.

Ingredients needed for this raita,

Cucumber- If you do not have Pahadi cucumber, you can use any type. The taste will always be unique. Yellow mustard- Make fine powder or a smooth paste with water. I use a mortar pestle for this. Green chilies, ginger, garlic cloves, mint leaves, cilantro leaves, salt turmeric powder, red chili powder, turmeric powder, and mustard oil.
