What is Dahi Ke Kabab?
Dahi ke kebab is a traditional North Indian kebab. It is vegetarian, easy, and quite delicious. Dahi means Yogurt in Hindi. We hang the yogurt overnight to get thick, creamy yogurt without water. Cheesecloth is used to hang the yogurt. All the other ingredients are combined into this kebab, which is then fried after a coating of bread crumbs. Fried till golden, this kebab tastes fantastic.
What is stuffed Dahi Ke Kebab?
I made a stuffed version to give this dahi ke kebab a festive twist. I made a lovely stuffing of coarsely ground dry fruits and grated paneer, which I then stuffed into the dahi kebab. Use a slurry to coat the bread crumbs evenly. Shallow or deep fry the kebabs. Enjoy stuffed dahi ke kebab with green chutney.
How to hang the yogurt /curd?
Take a big cheesecloth. Spread it inside a strainer so that the cheesecloth hangs from all sides. Place yogurt/curd inside and cover it with cheesecloth. Let it strain without weight for around one hour. Then, put a heavy weight on it and keep it overnight in the fridge (if it’s summer)or leave it outside if it’s winter. However, I prefer to keep it in the refrigerator in all weather.
Ingredients Needed to make this delicious Stuffed Dahi Ke Kebab?
Dahi/Yogurt—Any full-fat yogurt/dahi is good. You can also use Greek yogurt. Using low-fat yogurt doesn’t give the dish the right amount of creaminess. Roasted Gram Flour-You can roast the gram flour or besan or use sattu in this recipe. I have used sattu. Bread crumbs- Plain bread crumbs are suitable for this recipe. I would not suggest using any flavors. Spice Powders- Cumin Powder, red chili powder, other Ingredients like ghee/oil, dry fruits, fennel seeds, fresh herbs like cilantro and mint. Little all-purpose flour and water are needed to make a slurry. Salt and pepper (crushed).
