Ingredients Needed,
Udon Noodles Red Curry Paste Coconut milk Veggies of your choice Soy sauce Sesame oil Aromatics such as onion, and garlic. Basil or Cilantro and Lime Juice Gochugaru or any pepper flakes
How to cook?
Cooking this one-pot meal is super easy. Heat a deep pan with sesame oil. Add minced garlic and finely chopped onion to it. Saute till you can inhale the aroma. Do not let them turn brown. Add red curry paste, and stir once or twice. Add coconut milk to the pan with some water. Let it come to a boil. Throw some pre-cooked fresh udon noodles or noodles of your choice. Let them cook in the broth for some time. When noodles are almost cooked throw on some vegetables of your choice. Add some soy sauce and mix everything. Sprinkle some lime juice, and garnish with fresh herbs and red pepper flakes(optional). Enjoy a warm bowl of Thai Curry Udon Noodles which is a little bit soupy and extra slurpy.
Things to remember,
If you do not like spicy things, reduce the quantity of red curry paste. You can always use the protein of your choice in the noodles. You can choose your choice of vegetables too or just do not use any if you don’t like them. You can easily use your choice of noodles instead of these udon noodles. Any garnish or topping of your choice will work perfectly. You can make them with just a little bit of sauce or soupy. Depends on you.
