What is Tom Yum Soup?
Tom Yum soup is a Thai hot and sour soup usually made with Chicken. However, for vegan alternatives, tofu is used. However, this can also be made with your choice of vegetables. Here, I have kept the vegetables to a minimum; surely, you can increase them.
What Ingredients are needed?
Kaffir Lime Leaves, Garlic, Shallots, and fresh Thai chilies. Soy sauce/Vegan fish sauce, coconut sugar, and salt. Red Thai Curry paste, Coconut milk, vegetable stock, or water, and lime juice for that lovely tanginess. Your choice of vegetables. I have used button mushrooms and cherry tomatoes.
Types of Tom Yum soup?
There are two types of tom yum soup, and I love both. One type is the clear tom yum soup, which is thin but delicious. Another type is a creamy one, which is made of thick or thin coconut milk. I have used thick coconut milk because when mixed in the soup, I love the consistency of this tom yum soup. It’s so delicious.

Can we Store it in the refrigerator?
I will not suggest it. At the minimum, you can store it overnight, but not more than that. Keeping soup with coconut milk is not a very good idea in the long run as it spoils very quickly, and second, since it can prepared in less than twenty minutes. It doesn’t make any sense.
