I had this Vegetable Thukpa while traveling in North East of India. There in between the cold rainy evening and our travel, somehow we tasted this soup in a small kiosk at the roadside. It was just delicious, the freshness of vegetables and the lovely kick of spices made our experience much better.

What is Vegetable Thukpa (Tibetan Noodle Soup)

Thukpa is a Himalayan noodle soup and yes it can be made with vegetables, chicken, or meat. Almost all the countries of the Himalayan region have their version. This dish is prepared with any type of dry or fresh noodles, lots of vegetables, and spice mixes. It is warming and comforting. Easy to make this soup can be tweaked according to your preferences.

What ingredients are needed to make Vegetable Thukpa (Tibetan Noodle Soup)

Noodles, salt, oil, and water for cooking the noodles till al dente. For the Soup, Cooking oil(I have used avocado oil) Ginger, garlic, fresh chili, scallion, onion for aromatics. Tomato paste/puree, soy sauce. Turmeric Powder, cumin powder, red chili powder,garam masala powder, salt, and crushed black pepper. Cabbage, carrot, mushroom, Green Pepper, red pepper. For topping scallion and lime slices.

Can we store it in the refrigerator?

Yes. We can store this soup in the refrigerator for up to 3-4 days. The only suggestion I would give is to keep them separate to avoid very mushy and slimy noodles. Or you can boil noodles freshly and serve them with soup.

How to cook?

The first step is to cook the noodles. I Cook them with some salt till al dente. Later on, spread some oil to prevent the sticking of noodles. The second, step is to cook the broth or soup with all those crispy vegetables, lovely aromatics, and flavoring spices. This will taste delicious and amazing. The third step is assembling the Thukpa. Take a bowl. Place Some noodles in the bowl and pour some veggie broth on top of that. Garnish with fresh cilantro and lime and Enjoy.
